Cupping Notes: A sweet well balanced coffee with a floral aroma, producing a mellow fruity acidity with slight winey notes. Some people like to roast it dark, but we prefer putting a light to medium roast profile on this coffee.
Coffee Notes: These washed Arabica coffees are typically “shade grown,” high in the mountains of the volcanic region throughout Guatemala. These coffees are chosen from a cooperative mill made up of multiple small farms. SHB: Strictly Hard Bean coffee is grown at or over 4,500 feet above sea level, developing a denser coffee with more flavor. EP: European Prep is coffee that is sorted out BY HAND, removing all imperfect beans as well as any foreign materials such as sticks or pebbles.
